Kiwi Mojito
Everything you love about a mojito but with a sweet, tangy twist. The perfect spring cocktail.

- 1 Kiwi peeled and diced
- 2 oz white rum
- 1 tsp granulated sugar
- 4-6 mint leaves
- 1/2 limes quartered
- 1/2 lime juice
- 3/4 oz simple syrup
- club soda
- 2 lime wheels optional
In a Collin's glass, add cubed kiwi, mint leaves, sugar and quartered limes and muddle. Add in rum, lime juice and simple syrup and stir with a bar spoon. Next, add in crushed ice, and 2 lime wheels to the side of the glass. Top with club soda.
Garnish with more mint and a lime wheel and enjoy!
Allow your kiwis to ripen/soften for a few days on your counter prior to making your cocktails. The more ripe, the sweeter they'll be.
Slap the mint leaves to extract its natural oils. This will enhance the flavor of the mint.
