1/2cupshredded Colby jack cheese
Instructions
Bring a pot of salted water to a boil. Clean and dice potatoes into squares. (peel if desired). Boil the potatoes for about 5 minutes before straining them.
In a large skillet, cook smoked sausage until brown. Remove from the pan. Add canola oil to the rendered fat then add in the potatoes. Fry untouched for about 5-7 minutes then flip and toss with a spatula. Continue cooking the potatoes until they are crispy.
When they are cooked to your desired doneness, make a well in the middle of the pan, and add in red peppers, onions and chopped seasoning. Toss everything together and season with onion powder, garlic pepper, Tony's lite seasoning, and smoked paprika. Taste and adjust seasonings if needed.
Add the cooked sausage back to the pan and toss everything together. Reduce heat and top potatoes with shredded Colby jack cheese. Cover the pan with a top to allow the cheese to melt.
