In a saucepan, add unsalted butter and begin to brown over medium heat. Stirring constantly until the butter foams and turns golden brown. Make sure to only brown the butter lightly. As soon as the butter smells nutty and turns brown remove from the heat. Allow the butter to cool to touch before using.
In a large bowl combine browned butter, brown sugar, granulated sugar. Then add in the eggs, greek yogurt, buttermilk, and vanilla.
In a separate bowl, combine flour, baking powder, apple pie spice and salt. Add the dry ingredients into the wet ingredients. Mix until just combined, the batter will be thick. Next, fold in the spiced apples.
With a large ice cream or cookie scoop, scoop the batter into the prepped muffin tins filling them 3/4 of the way.
Top the muffins with the streusel topping.
Bake the muffins at 400°F for 5 minutes, then reduce the heat to 375°F and bake for an additional 20-25 minutes, or until the muffins are golden and a knife inserted comes out clean.
Remove from the oven, top with powdered sugar. serve warm & enjoy!
