Y’all know I love a good sandwich, and one of my absolute favorites is a blackened chicken sandwich. It’s juicy, flavorful, and so satisfying! Here’s my recipe for one of my go-to favorites!
What’s Blackened Seasonings?
Blackened seasoning is a Southern classic that gives you all the flavor without the need for frying. It’s a mix of chili powders, herbs, and spices that packs a punch! For this recipe, I wanted Tajín Classico to shine because its made of chili and lime. I also added a little onion powder, garlic powder, Italian seasoning, salt, pepper, and a dash of brown sugar to balance everything out.

How to make Blackened Chicken Sandwich?
In a skillet toast potato rolls in butter and oil over medium heat until they get golden brown.
Thinly slice chicken breast then drizzled olive oil and seasoned with Tajìn classico, garlic powder, onion powder, salt and black pepper.
In a hot skillet, sear the chicken in neutral oil for 5-6 minutes on each side, undisturbed, until it develops a blackened, charred crust. Once cooked, add pepper jack cheese slices then add in 1 tbsp of water and cover. The water will create steam helping the cheese get melty and gooey.

What you’ll need
- Chicken breast: thinly sliced
- Seasonings: onion powder, garlic powder, Italian seasoning, black pepper, salt and brown sugar.
- Tajìn Classico: To give it that spice with a bright flavor of lime.
- Hellmann’s Chili Lime Mayonnaise: The perfect spread for this sandwich.
- Pepper jack cheese: Or your favorite cheese.
- Potato rolls: My favorite brand of buns are Martin’s Potato Rolls. Hawaiian Rolls would also be really good with this recipe.
- Pickled Red Onions: the perfect sandwich topping. I make them weekly.
- Lettuce: I used romaine
- Tomato: I used Heirloom tomatoes
- Unsalted Butter + neutral oil.

Blackened Chicken Sandwich
Ingredients
- Chicken breast thinly sliced
- 1 tbsp unsalted butter
- 2 tbsp neutral oil
- 1/2 tbsp Tajìn Classico
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp Italian seasoning
- 1/4 tsp salt + black pepper
For the Sandwich
- Potato Rolls
- pepper jack cheese
- tomatoes
- romaine lettuce
- pickled red onions
- Hellmann's Chile Lime Mayonnaise
Instructions
For the seasoning blend
- Combine onion powder, garlic powder, Italian seasoning, salt, pepper and a pinch of brown sugar.
For the chicken
- In a skillet, toast potato rolls with butter and oil over medium heat until golden brown and crispy.
- Thinly slice chicken breasts, then drizzle with olive oil. Season generously with Tajín Classico, and the seasoning blend.
- Heat a skillet over high heat with neutral oil. Sear the chicken for 5-6 minutes on each side, undisturbed, until a blackened, charred crust forms. Once fully cooked, top with pepper jack cheese slices. Add 1 tablespoon of water to the skillet, cover, and let the steam melt the cheese to a gooey perfection.
To assemble
- Take some of the Hellmann’s Chili Lime Mayonnaise and spread it generously on the toasted side of both buns.
- On the bottom bun, layer fresh lettuce, seasoned tomato slices, the blackened chicken breast with melted pepper jack cheese, and pickled red onions. On the top bun, add creamy avocado slices.
- Put the sandwich together, slice in half. Serve with chips or fries and enjoy!
