Back with another summer recipe! This frozen summer mojito is truly summer in a glass. Capturing the essence of the season—bright, sweet, tangy and refreshing. Everything we love about a mojito blended into a perfect icy concoction.

As with all mojitos, this frozen delight is super easy to make. Takes a few steps, but so worth it. It’s sweet, it’s tangy and so yummy! Made with Rum, mint and lots of fresh lime! This is the cocktail you need in hand on a blazing hot day.

Ingredients for Frozen Summer Mojito

Lime Cubes: frozen lime juice cubes or you can make frozen lime and mint ice cubes. Perfect for this recipe.
Rum: Choose your favorite white rum for this recipe.
Mint: fresh mint is essential for a mojito.
Lime Juice: i used both Simply Lime Juice and fresh lime juice for this recipe to keep the lime flavor and help blend up the drink.
Simple Syrup: equal parts water and sugar to sweeten this cocktail up.
Club Soda: optional. Because this is frozen you can also opt out. But feel free to top the frozen cocktail with it.

How to make frozen summer mojitos?

The recipe is fairly easy. It starts with making the lime and mint ice cubes.

Step 1: To a silicone ice cube tray add fresh mint leaves, Simply Limeade and fresh lime juice. Because you know the drill- if it’s not fresh I don’t want it. Allow the ice cubes to freeze for 4-6 hours. (since this is a frozen drink, the ice cubes don’t have to be fully frozen. 6 hours will give the perfect slushy effect)

Step 2: Once frozen, add the ice cubes to a blender with white rum, simple syrup, more mint, limeade and lime juice. Blend until smooth.

Step 3: Pour into a chilled glasses, and top with club soda or sprite, if desired. Garnish with fresh mint and a lime wheel and enjoy!

Make it a mocktail

make it a mocktail by opting out of the rum and replacing with a N/A rum or just the lime juice.

Ingredients
  

for the ice cubes

  • 3 limes juiced
  • 2-3 mint sprigs
  • 1 cup Simply Limeade about 6 large ice cubes

For the mojito

  • 2-4 oz White Rum based on your preferred alcohol strength
  • 6 lime mint ice cubes
  • 3/4 oz simple syrup
  • 1 oz Lime juice use more if needed
  • 3 sprigs Mint

Instructions
 

To make the ice cubes

  • to a silicone ice tray add fresh lime juice, Simply Limeade and fresh mint. Place in the refrigerator for at least 6 hours. Makes 6 ice cubes)

For the Mojito

  • Chill glasses in the fridge. To a blender, add mint lime ice cubes, rum, simple syrup, Simply lime juice, and fresh mint. Blend until smooth.
  • Pour mojito into chilled glasses. Garnish with a lime wheel and mint sprig and enjoy!
