If you didn’t know by now- this is a Brussels sprout STAN account! I absolutely love Brussels sprouts, so I decided to add them to one of my all-time favorite salads—Caesar salad, of course. This Brussels Sprout Caesar Salad is such a fun and delicious way to serve up these veggies.

Ingredients for Brussels Sprout Caesar Salad?

Here’s what you’ll need to make this delicious salad:

  • Brussels sprouts: thinly sliced and cleaned well.
  • Bread Crumbs: I prefer using panko bread crumbs.
  • Parmesan cheese: grated.
  • Bacon: feel free to use pork bacon. I used turkey bacon
  • Your favorite Caesar Dressing: Here’s my favorite caesar dressing. You can also make yours from scratch if you prefer.
  • Lemon: the juice of half a lemon. This adds the perfect brightness to the salad.
  • Seasonings: salt, pepper, garlic powder, garlic and herb seasoning.
  • Crispy Fried Onions: I love adding these crispy onions to my salads. You can also make these from scratch if preferred.
  • Butter: unsalted.
  • Olive Oil: or a neutral oil.

  • Add a Protein: Top your salad with your favorite protein, like a juicy steak or crispy chicken cutlets, to make a more filling meal.

Shaved Brussels Sprout Caesar Salad

Ingredients
  

  • 2 cups Brussels sprouts shaved/thinly sliced
  • 3/4 cup Caesar dressing use more if needed
  • 2 strips turkey bacon
  • 1/4 cup crispy fried onions
  • 1/2 juice of a lemon
  • salt + pepper to taste

Toasted breadcrumbs

  • 1/2 cup panko
  • 1/3 cup grated parmesan cheese + more
  • 1 tbsp unsalted butter
  • 1 tsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp garlic and herb seasoning or Italian seasoning
  • salt + pepper to taste

Instructions
 

  • Trim the stems off the Brussels sprouts, then cut them in half and thinly slice. Alternatively, you can use the shave feature on a food processor for quicker prep
  • Place the shaved Brussels sprouts in a mesh strainer and rinse thoroughly under cold water
  • In a skillet, cook the bacon until it's crispy, then remove it from the pan and set it aside. Once cooled, dice it into small pieces
  • In the same skillet, add unsalted butter and olive oil over medium heat. Stir in panko breadcrumbs, Parmesan cheese, garlic powder, garlic and herb seasoning, Italian seasoning, and salt and pepper to taste. Toss everything together, stirring frequently
  • Allow the breadcrumbs to toast until they turn a golden brown color. This should take about 7-10 minutes. Once toasted, remove from the heat and let cool before serving
  • To assemble the salad- add the shaved Brussels sprouts to a large bowl. Drizzle with your favorite Caesar dressing, then season with salt, pepper, and a squeeze of fresh lemon juice. Toss until the Brussels sprouts are evenly coated
  • Add the crispy bacon, toasted breadcrumbs, a handful of crispy onions (if desired), and extra Parmesan cheese to the bowl. Toss until everything is well-coated and evenly distributed throughout the salad
  • Top with more toasted breadcrumbs if desired and enjoy!
